These spirulina truffles are so quick and easy to make and a great way to get a bit of added superfood into your system. Raw, sugar free, gluten free and delicious.
CHOCOLATE SPIRULINA TRUFFLES
20 large fresh medjool dates, stone removed
2 tbsp extra virgin coconut oil
2 tbsp desiccated coconut
2 tbsp cacao powder
1 tbsp spirulina powder
1. Process your dates in a food processor, using the pulse function, until they are smooth and fudgy. Add the rest of your ingredients and pulse until well combined.
2. Place your mixture in the fridge for around 10 minutes to firm up a little.
3. With slightly damp hands, roll your mixture into small balls until all your mixture is used up. Roll each ball in either chopped pistachios or cacao powder and allow to chill in your fridge for a minimum of 20 minutes before serving.
