Salmon and Horseradish snitter
For Christmas Day you couldn't get a more perfect canape. These are a Scandinavian delight and I can't get enough of them!
SALMON AND HORSE RADISH SNITTER
I quantity of horseradish cream (see horseradish cream recipe)
1 bunch chervil
2-3 tbsp. lemon juice
6 slices of good quality dense rye bread or similar
10 slices smoked salmon
1. Cut the cucumber into small cubes, chop the chervil and mix along with the lemon juice, salt and pepper.
2. With a 4cm cookie cutter, cut out 16 pieces of rye bread and place them on a work surface. Cut the salmon into long slices and roll each into a salmon rose. Place one on each piece of bread and fill with 1 tbsp. horseradish cream. Divide the cucumber mix on top of all the snitter; it should look a little rustic, not perfect.
