Raspberry and Strawberry Clafoutis
One of my go to desserts when i'm short on time and ingredients. This is a fantastic quick and simple dessert that can be modified to use any type of fruit you have on hand, regardless if its fresh, frozen or canned. Play around with this simple French inspired dessert, the combinations of flavors are endless.
STRAWBERRY AND RASPBERRY CLAFOUTIS
½ cup washed strawberries and ½ cup raspberries
1/3 cup caster sugar
finely grated zest of 1 orange
2 tablespoons freshly squeezed orange juice
1 tablespoon butter
⅓ cup flour
1 egg yolk
200ml whole milk
23cm round ovenproof dish
1. Butter a 23cm round ovenproof dish (a deep oven-proof frying pan can be used). Whisk flour, sugar, eggs, orange zest, juice, yolk, milk, cream and remaining vanilla until smooth.
2. Blob strawberries and raspberries into the prepared dish and pour over custard mix.
3. Bake for 40–45 minutes until just set in the middle. Remove from the oven, leave for 5–10 minutes to rest and set up, then dust with icing sugar and serve with vanilla bean ice cream.
