Radicchio & Citrus Salad with Pomegranate

The perfect winter salad, making use of all our bold, bright citrus flavours.  A stunning looking salad, packed with vitamin c to help ward off the winter colds and flues.  

RADICCHIO AND CITRUS SALAD WITH POMEGRANATE

Serves 4-6

INGREDENTS

1 blood orange, peeled and segmented

2 mandarins, peeled and segmented

1 orange, peeled and segmented

Generous handful of red radicchio leaves, Shredded

1 medium fennel, sliced very finely

1 shallot, finely sliced

2-3 handfuls of rocket or water cress leaves

2 tbsp. flat leaf parsley

2-3 tbsp. pomegranate seeds

25 g almonds, skin on roughly chopped

1 ½ tbsp. barberries, soaked in water for 2 minutes, drained and patted dry

Labneh or Danish fetta crumble on top

DRESSING

½ tsp pomegranate molasses

1 tbsp. red wine vinegar

1 tsp thyme leaves

60 ml extra virgin olive oil

Salt and black pepper.

METHOD

1.       To make the salad, combine the citrus and salad ingredients in a large bowl.  Add enough dressing to lightly coat the ingredients.

2.      Place salad onto a large serving plate or platter.  Sprinkle with barberries, pomegranate seeds, chopped almonds.  Finish with either labneh or Danish fetta and remaining herbs.
