Orange, Pomegranate and Prosecco Cocktails
This is a really delightful little addition to some chilled prosecco, that will set the standard for Christmas Day.
POMEGRANATE AND ORANGE COCKTAIL MIXER
Makes ½ cup
½ cup caster sugar
Pared zest of 1 orange, with pith removed and sliced into strips
Pomegranate juice, pomegranate, and prosecco to serve
1. Combine sugar, zest and 1 cup of water in a saucepan over a medium high heat, stirring until sugar dissolves. Increase the heat to high and bring to the boil, then boil for 6-8 minutes until slightly reduced.
2. Transfer to a jug and set aside to cool. Pour into a small ½ cup capacity bottle or jar with a lid to give as a gift along with a pomegranate, some pomegranate juice, and some prosecco.
3. To use straight away in a cocktail, add 2 tbsp. of the orange mixer, 1 tbsp. pomegranate juice and a few pomegranate seeds to a flute of prosecco.
