Basic Potato Gnocchi
This is a good basic recipe for an italian style potato gnocchi. A great starting point to lead you onto so much more.
BASIC POTATO GNOCCHI
800 g baked potato (peeled)
2 egg yolks
1 whole egg
100-200 g Plain Flour
1. Press your hot baked potato through a drum sieve or a potato ricer, add salt yolks and eggs. Sprinkle flour over the mixture and gently kneed to a soft dough. Separate the mixture into small balls and roll into thin logs, then cut to size.
2. Place onto a floured tray and refrigerate until all the gnocchi is rolled.
3. Meanwhile bring a large pot of lightly salted water to the boil. Add the gnocchi in batches and stir gently. Wait until they float to the surface, then leave for an extra minute, then remove and place in a bowl of iced water. Repeat this process until all your gnocchi is cooked.
