Carrot, Avocado and Edamame Salad

A light and refreshing salad which will leave you feeling full of goodness.  Quick and easy to make!


Serves 6



5-6 carrots peeled and cut into thin strips.  

1 cup cooked shelled edamame, refreshed under cold water

1/4 cup black sesame seeds

big handful of corriander leaves

salt + pepper

1/2 ripe avocado, peeled + chopped


1/4 cup fresh orange juice

juice of 1 lime

salt + pepper

1 1/2 tbsp honey

1 inch piece of ginger, peeled and grated finely on a microplane

couple drops of toasted sesame oil

1/4 cup grapeseed oil


1.  Combine the carrot, edamame, avocado, sesame seeds and chopped corriander in a large bowl. Season the whole mixture with salt + pepper and toss lightly with your hands. Set aside.

2.  In a small-medium bowl, combine the orange juice, lime juice, salt + pepper, honey, ginger and sesame oil. Whisk it all together until incorporated. While whisking with one hand, slowly drizzle in the grapeseed oil until well combined.  

3.  Pour the dressing over the carrot and edamame mixture. Toss to combine.  Garnish the dish with more sesame seeds and corriander if you like.
