Kapow Beetroot Power Balls
A power packed energy ball, great for kids and adults lunch boxes and perfect when your looking fora little afternoon pick me up.
BEETROOT, SESAME, DATE POWER BALLS
200 g sesame seeds
100 g honey
2 ½ tbsp. coconut oil
2 tbsp. raw cacao powder
1 heaped tsp ground ginger
1 heaped tsp ground cinnamon
100 g beetroot powder
100 g pumpkin seeds
50 g almond meal
30 g chia seeds
200 g fresh dates, seed removed
2 tbsp. tahini
2 tsp salt flakes
50 g cacao nibs
1. Toast the sesame seeds lightly in a dry frying pan over a medium heat, until lightly coloured and starting to crackle. Set aside to cool.
2. Add the honey, coconut oil, cacao powder, spices and 3 tbsp. of the beetroot powder to a small saucepan and gently warm until all ingredients are melted and well combined.
3. Add the sesame seeds and the pumpkin seeds to a food processor and blend until you have the texture of almond meal. Add the almond meal, chia seeds, dates, tahini and salt and process until you have a course dough. Chill the mixture for 20 minutes to firm up, then roll into balls.
4. Roll the balls into the reaming beetroot powder and gently into the cacao nibs.
Will keep in an air tight container in the fridge for up to 10 days.
