Grilled Eggplant Salad With Goats Cheese, Mint and Pomegranate

INGREDIENTS

2 Eggplants, cut length ways

250 ml olive oil

Juice of 2 lemons

1 tbsp of white wine vinegar

1 garlic clove, finely chopped

1 cup loose leaf mint

1 cup loose leaf parsley

seeds from 1 pomegranate

goats cheese

METHOD

1.  Heat a barbecue or a grill pan to a medium heat.  Brush eggplant with olive oil, season to taste and grill until tender (4-5 minutes).  Transfer to a bowl or deep plate.

2.  Combine the lemon juice, vinegar, garlic and remaining oil in a bowl and pour onto eggplant.  Top with herbs, goats cheese and drizzle with olive oil.
