All Day Migas
This is a flavour packed Mexican inspired breakfast that I would eat any time of the day. It takes minutes to prepare and it will leave you totally satisfied.
ALL DAY MIGAS
1 tbsp. olive oil
4 tortillas cut into rough wedges
½ onion, finely diced
2 free range eggs
½ cup crumbled feta cheese
Salt and pepper
2 tbsp. chipped coriander
TO TOP IT OFF
Hot sauce, fresh chilli, diced avocado, extra coriander, freshly squeezed lime juice.
1. Heat a medium sized heavy based frying pan to medium high heat, add the olive oil and cook your onion to soft and translucent. Add the tortilla wedges and cook until the wedges start to brown and go crispy.
2. Add in your beaten eggs, and gently toss with the tortilla wedges until just combined. Cook until the egg has just set for 1-2 minutes.
Remove from the heat and finish with your hot sauce and toppings
