Roast Pumpkin, Cauliflower and Grape Salad

This is a super quick salad to make which requires very few ingredients.  It is the perfect salad for those cooler nights when you want something a little more soul warming.

ROAST PUMPKIN, CAULIFLOWER AND GRAPE SALAD

INGREDIENTS

½ Kent pumpkin, chopped into rough, think slices

Half a cauliflower, broken into small florets

1 large bunch grapes

1 small bunch fresh sage

1 small bunch fresh thyme

Olive oil

Juice of a lemon

METHOD

1.       Preheat oven to 200 degrees fan forced.  Line two separate trays with baking paper.  Place the pumpkin on one tray and the cauliflower on the other.  Drizzle with olive oil, sprinkle with thyme and sage leaves and season with salt.  Bake for 30 minutes, then add the grapes to the cauliflower and cook for another 20 minutes or until the vegetables are golden brown and the grapes are soft.

2.      To serve place on a large flat plate and scatter over some extra fresh thyme leaves and squeeze over some fresh lemon juice.
