
Best Ever Carrot Cake
This is a fantastic, traditional carrot cake recipe, resulting in a large, moist cake full of flavour.

INGREDIENTS
3 cups self-raising flour
1 ½ cups caster sugar
1 pinch salt
1 ½ tsp bi-carb soda
3 large eggs
1 cup chopped walnuts
1 cup grated carrot
1 tin crushed pineapple
1 ½ cups canola oil
1 tsp vanilla
1 tsp cinnamon
½ tsp l cardamom
2 tbsp. chopped glace ginger
METHOD
1. Preheat oven to 180 degrees. Sift the flour, sugar, salt, bi-carb soda, cinnamon, cardamom together in a large bowl.
2. Add all the other ingredients and mix until well combined. Spoon into a well-greased spring form tin.
3. Bake in a preheated oven for 45 minutes to an hour or until a skewer comes out clean.
To serve cover with cream cheese icing.
