Soup in a Jar- Miso Version
This is a fantastic, quick and easy way to pre pack a healthy and delicious lunch. Pre packed soups in jars are both fun and really versatile to make. a great idea when you want to take a healthy lunch to work.
SOUP IN A JAR – MISO VERSION
50 g either soba noodles or rice vermicelli, cooked and chilled
1 tbsp. miso paste
1 tbsp. soy sauce
1 finely chopped spring onion
1 finely chopped red chilli (optional)
A handful mixed greens
½ small zucchini, either thinly sliced or put through a spiralizer
¼ carrot, thinly sliced or put through a spiralizer
1 tsp sesame seeds
½ cup roughly chopped mint, basil and coriander
1. Place your miso paste in the bottom of your jar and continue to layer your ingredients in until your jar is full. Place in the fridge until ready use.
2. Once ready to use, pour over boiling water until just below the top of the jar. Replace the lid and allow to sit for a few minutes. Remove the lid and stir all the ingredients up with a fork, making sure you miso paste is well mixed through. Either eat straight from the jar or alternatively pop into a bowl.
