Cypriot Salad

So much flavour in one bowl!  This salad is perfect on its own or as a side.  A great one to pack for a healthy lunch that will leave you energised for the afternoon.

CYPRIOT SALAD

INGREDIENTS

1 bunch coriander, chopped

½ bunch parsley, chopped

½ red onion, finely diced

1 cup freekah

2 tbsp. toasted pumpkin seeds

2 tbsp. toasted slivered almonds

2 tbsp. toasted pine nuts

2 tbsp. baby capers

½ cup currants

Juice of 1 lemon

3 tbsp. extra virgin olive oil

Dash of red wine vinegar

Sea salt to taste

1 pomegranate, deseeded

1 tbsp. honey

METHOD

1.      Blanch freekah in boiling water until just cooked. Drain well and allow to cool

2.      Make a vinaigrette by mixing olive oil, red wine vinegar and honey.

3.      In a medium bowl, place the coriander, parsley, red onion, freekah, toasted nuts, capers, currants, pomegranate seeds.

4.     Add vinaigrette, mix well and season to taste.
