Super Charged Tortilla Share Plate
This is a stunning dish inspired by the humble nachos, in a much healthier way. Packed with spice and flavour, this will change the way you look at nachos forever.
SUPER CHARGED TORTILLA, CORN, KALE, AVOCADO SHARE PLATE WITH SPICY CASHEW CREAM
6 corn tortillas cut into rough wedges
Corn from one fresh cob
¼ bunch fresh kale, roughly chopped
1 avocado, diced
1 cup crumbled feta cheese
1 cup chopped coriander
Freshly squeezed juice of a lime
½ tsp sweet paprika
Salt and pepper
1 cup soaked unsalted raw cashews
Juice and zest of 1 lime
1-2 green or red chilli (use the chilli depending on how hot you like it)
Half cup chopped coriander, stalks included.
1. For the cashew cream. Place all your ingredients in a high powered blender or small processor. Blend until super smooth and creamy.
2. In a large heavy based baking dish, combine your tortilla wedges, chopped kale, feta, corn cornels, salt and pepper and gently combine. Drizzle with a little olive oil, sprinkle with paprika and place into a 200 degree preheated oven for 10-15 minutes or just until the kale and tortillas go crisp.
3. Remove from the oven and top with avocado, coriander and generously spoon over the cashew cream. Finish with a squeeze of lime.
