Oven Roasted Rosemary Grapefruit with Macadamia Crumble
This is a beautiful little breakfast which is both refreshing and sweet. A little treat to start your day with.
OVEN ROASTED ROSMARY GRAPEFRUITS WITH MACADAMIA CRUMBLE
2 large grapefruits
3 tbsp. brown sugar
1/ 4 cup fresh rosemary leaves, roughly chopped
½ tsp ground ginger
1 cup soaked macadamia nuts
1 tsp of vanilla extract
½ cup maple syrup
Pinch sea salt.
1. Preheat your oven to 180 degrees and line a baking tray with baking paper.
2. Slice your grapefruits in half, then run a knife around the outside edge between the fruit and the pith. Sprinkle your grapefruits with brown sugar, ground ginger and rosemary. Place in the oven to bake for 30 minutes.
3. Meanwhile, to make the macadamia crumble, place all your ingredients in a food processor and blend until you have a rough crumble like texture.
4. Remove your grapefruits from the oven and allow to cool for 5 minutes. Serve with a big scoop of crumble on top.
NOTE: You can buy special knifes designed for removing grapefruits from their skin. They are a great investment if you eat a lot of grapefruit. Slicing around the rim of the grapefruit prior to baking makes them much easier to remove.
