Refreshing Fennel and Orange Salad
You can't get a more refreshing combination then fennel and orange. This beautiful salad with its delicate flavours is a favorite to serve with seafood.
ORANGE AND FENNEL SALAD
2 Medium Fennel bulbs, finely sliced (on a mandolin if possible)
1 tbsp. lemon juice
¼ cup extra-virgin olive oil
4 medium oranges
2 cups of fresh watercress
½ cup (50 g) walnut halves, roughly chopped
1. Place Fennel into a large bowl with lemon juice and olive oil. Season with sea salt and freshly ground black pepper, toss to ensure the fennel is coated in the seasoned oil.
2. Remove the skin and pith from the oranges with a knife; finely slice into thin circles. Arrange orange slices and watercress on a platter and top with fennel and its dressing. Scatter with walnuts.
