Pork Hot Dog with Pickled Green Papaya
This is the best hot dog you will ever eat! Asian fusion meets the humble dog. Sweet, sour, crusty rolls, it doesn't get better then this.
good quality pork sausage
crusty hot dog buns (Vietnamese style are good)
1 x green papaya
rice wine vinegar or apple cider vinegar
1 red chilli sliced
handful of coriander leaves
thinly shredded cucumber
Aioli or japanese mayonnaise
1. For the green pickled papaya, stir vinegar, sugar, 120 ml water and 1 tsp salt in a saucepan over medium heat until sugar dissolves, bring to the simmer. Transfer to a bowl, cool, add papaya, set aside until just pickled (5-10 minutes). Drain.
2. Cook sausages on your BBQ. While cooking sausages use the char grill on your BBQ to toast your buns.
3. Swipe some chilli jam, mayonnaise onto you cooked bun, add sausage and top with green picked papaya, shredded cucumber, coriander leaves and fresh sliced chilli.
