Kale, Quinoa and Feta Fritters

Make a bunch of these healthy, flavor filled quinoa fritters for a quick and easy lunch option.  Serve in a roll or on a simple fresh salad.

Kale, Quinoa and Fetta Fritters Rolls

INGREDIENTS

makes 6-8 small Fritters
100g quinoa
50g kale, chopped
2 stalks spring onion into rings
1 clove garlic, finely chopped
100g crumbled feta cheese
1 egg
50 grams of rolled oats
freshly ground pepper and salt

Toppings
avocado, sliced
ucumber, sliced
ress or another green salad
coriander leaves

METHOD
1.  Cook the quinoa according to package directions and drain.

2.  Put the cooked quinoa with the kale, spring onion, garlic, egg and oatmeal in a bowl. Mix by each other. Add the feta cheese and mix well. Generously season with salt and pepper. Let the mixture stand for 10 minutes so that it can bind.

Shape mixture with your hands in to small rounds.  You will need to press the mixture together firmly.

Heat olive oil in a skillet. Bake the fritters on both sides in a few minutes golden brown and crisp.  Make sure the first side is cooked before attempting to flip them over, as the mixture is quite fragile and requires and very gentle hand.

Meanwhile assemble your burger buns or rolls topping with avocado and cucumber slices.  Place in the fritters and top with salad.

NOTE:  These fritters are lovely served with a simple salad for a quick and easy lunch.
