Homemade Chocolate Ice Cream

Delicious and easy, this homemade chocolate ice-cream is a winner with everyone!

INGREDIENTS

1 cup milk

2 cups pouring or single cream

1 tsp of vanilla extract

6 egg yolks

2/3 cup caster (superfine) sugar

150 g dark chocolate, chopped

METHOD

1.  Heat the milk, cream, chocolate and vanilla in a saucepan over medium heat until hot, but not boiling.

2.  Place the egg yolks and sugar in a bowl and whisk until thick and pale.  Slowly pour the hot cream mixture into the egg yolk mixture, whisking continuously.

3.  Pour the mixture back into a clean saucepan and stir over low heat for around 4 minutes or until the mixture has slightly thickened and it coats the back of a wooden spoon.

5.  Pour the cooled chocolate custard mixture into an ice-cream maker and churn according to the manufacturers instructions.  I churned mine for around 30 minutes.  Store custard in an ice-cream container in the freezer.

NOTE: I highly recommend storing your ice-cream in a container designed specifically for ice-cream.  They are prevent your ice-cream from going too hard and prevent ice crystals forming.  The brand I use is Tovolo.
