Green Bean, Snow Pea and Cranberry Salad
This is a simple but really lovely side dish that work perfectly along side a roast turkey or pork.
GREEN BEAN, SNOW PEA AND CRANBERRY SALAD
¼ cup red wine vinegar
1 clove garlic, crushed
1 tsp caster sugar
2 tbsp. olive oil
Sea salt and cracked pepper
250 g green beans trimmed
250 g snow peas, trimmed
¼ cup pine nuts, toasted
¼ cup sweetened dried cranberries or barberries
1. Place the beans in a pot of boiling water for two minutes, then drain and refresh under cold water.
2. To make the dressing combine the vinegar, crushed garlic, sugar, olive oil and salt and pepper in a small jar or bowl and mix well to combine.
3. Toss the green beans together with the snow peas, pine nuts and cranberries or barberries. Refrigerate until ready. Pour over the dressing just before serving.
