Crunchy Walnut Rainbow Christmas Salad
This salad is a celebration of colour using fresh seasonal produce. The addition of fresh berries add a real festive kick and walnuts add mountains of flavour and texture.
RAINBOW CHRISTMAS SLAW
75 g very finely sliced kale
¼ red cabbage finely sliced
¼ red onion finely sliced
2 carrots grated
1 stick celery very finely sliced
1 large beetroot grated
1 ½ cups toasted and chopped walnuts
60 g blackberries or other similar berries will work fine
1 ½ tbsp. maple syup
1 tsp French style mustard
Good splash of red wine vinegar
100 ml good quality olive oil
Pinch sea salt
1. Combine all your very finely sliced salad ingredients in a large bowl, leaving out the berries. Add your walnuts and dressing and using your hands mix gently to combine. Serve in large bowl or plate and top with your berries.
NOTE: You can mix up your salad ingredients depending on what you have on hand and what appeals to your taste. Always purchase berries as close to using them as possible as they spoil very quickly. The key to this recipe is to toast your walnuts to bring out their beautiful flavor, so don't be tempted to skip this step!
