COCONUT JELLIES

Fun, Fun Fun! There is not a lot else to say about these jelly filled coconuts! What a terrific idea for a kids party, especially if the theme is tropical. A little post to brighten your day and to get you thinking about the summer to come!


Makes 6 halves
INGREDIENTS
3 brown coconuts
Mixed packets of coloured Jelly.


METHOD
To split the coconuts, place the coconut in the palm of your hand over a sink or outside. Using the blunt side of a heavy mallet, hit the coconut around the outside of its circumference until you make a crack. Continue around the coconut until you meet the other side, then price the halves apart. Discard contents.
Place coconuts into bowls so that they stand upright. Make jelly according to the instructions and pour into coconuts.
Set over night.


NOTE: Another option to fill the coconuts is to make your own jelly using fruit juice and gelatine leaves. Make sure you follow recipes closely when making jelly from fruit juice as the pectin levels can affect the setting ability of the jelly.
