Cherries In Vodka
This is a brilliant way to dress up some cherries for the festive season. Use in desserts or add to a Christmas cocktail. This also makes a wonderful gift idea.
CHERRIES IN VODKA
500 g fresh cherries, seeded
3/4 cup (165 g) caster sugar
2 cups (500 ml) vodka
1. Place clean, unchipped jar or jars lying down in a large pan. Cover completely with warm water. Bring to the boil and boil, covered, for 20 minutes. Carefully remove the jars from the water (using tongs and rubber gloves) and drain well; stand upright on a wooden board. The heat from the jars will evaporate any water remaining in the jars. Or use the rinse cycle and the hottest temperature in the dishwasher without adding dishwasher powder.
2. Layer cherries and sugar in the jars. Pour enough vodka over cherries to cover them completely. Replace the lids tightly.
3. Stand in a cool dark place for at least 6 weeks before using. Invert jars occasionally to help dissolve the sugar.
The cherries can be served with cream or ice-cream and the vodka can be used in mixed drinks or cocktails.
