The Quickest, easiest and tastiest ten minute meal you will ever make!

Ok lets face it, it's about time I hopped on the meals by minutes ban wagon!  By that I am referring to Jamie's 30 minute meals, which then got shrunk down to Jamie's 15 minutes meals. Well... move over Jamie Oliver I'm all about the ten minute meal makeover!  This recipe is a start anyway.  It's easy, so so simple and totally delicious.  You need very few ingredients and trust me by the end of this quick and easy dinner you will be left totally satisfied.  So without using up any more of your valuable time, here it is!

TEN MINUTE SOBA NOODLES

INGREDIENTS

Serves 2

1 large chilled Lebanese cucumber

2 bundles of soba noodles

Dressing (mix these in a small bowl)

3 Tbsp. soy sauce

2 Tbsp. raw sugar (You can reduce this if you wish)

1 Tbsp. white vinegar

1 Tbsp. sesame seeds

1 tsp minced garlic

½ cup roasted chopped peanuts

½ cup coriander leaves

METHOD

1. Make the sweet chilli soy dressing by mixing the listed ingredients above.

2. Rinse the cucumber thoroughly.  Removed the seeds and cut into batons.

3. Cook the soba noodles in rapidly boiling water until al dente. (Follow the directions from the package.) Drain the water and cool down the noodles under cold running water for about 1 minute. Stir the noodles with some tongs or your hand while it’s under the water. Drain the noodles well.

4. Place Noodle in a bowl, pour over your sesame sauce, top with cucumber, peanuts and coriander.

NOTE:  If you like a little spice add a little fresh or dried chilli.
